The liquid gold of Bordeaux: the excellence of Sauternes

Sauternes represents the ultimate expression of French sweet wines, a precious nectar produced in the southwestern region of Bordeaux. These extraordinary wines are made from Sémillon (predominant), Sauvignon Blanc and sometimes Muscadelle grapes, affected by “noble rot” (Botrytis cinerea), which concentrates the sugars and develops unique aromas. This natural phenomenon is made possible by the unique microclimate created by the confluence of the Garonne and Ciron rivers, whose temperature differences favor the formation of morning fog, which is essential for the development of Botrytis.

Sauternes wines are distinguished by their incredible aromatic complexity, which evolves over time. When young, they offer notes of exotic fruit, candied citrus, and white flowers; with aging, they develop fascinating hints of honey, saffron, dried fruit, caramel, and spices. The classic and unsurpassed pairing is with foie gras, where the sweetness of the wine perfectly balances the richness of the goose liver. Equally memorable is the pairing with blue cheeses such as Roquefort, where the acidity and savoriness of the cheese find an ideal counterpoint in the sweetness of the wine. For a more contemporary experience, they can be paired with spicy Asian dishes or desserts that are not too sweet, such as dry pastries or fruit-based preparations.
