The origins of Billecart-Salmon
Billecart-Salmon was founded in the early 19th century, in 1818 to be precise, in Mareuil-sur-Aÿ, a Premier Cru commune in the Vallée de la Marne.
The Maison, which came into being through the union of Nicolas François Billecart and Elisabeth Salmon, remains a family-run business today, as it always has been, with François and Antoine Roland-Billecart at the helm and the sixth generation now active in the company.
Every member of the Billecart-Salmon family has always been committed to carrying on the tradition, remaining faithful to a sort of oath: ‘to prioritise the highest quality and always pursue the utmost excellence’.
With around 100 hectares of vineyards owned by the family, the Roland-Billecart family sources grapes from a total area of 220 hectares, divided between forty different crus, including some of the best plots of Pinot Noir, Chardonnay and Pinot Meunier in the entire Champagne region, located mainly around Epernay, in the Vallée de la Marne, but also in the legendary lands of the Montagne de Reims and the Côte des Blancs area.
Salmon-Billecart Champagnes
The ancestral winemaking methods, which take place strictly in small 50-hectolitre wooden barrels, have been passed down from generation to generation and constantly perfected.
Over the years, the technique of must refrigeration combined with the use of steel has also been developed, as well as low-temperature fermentation.
Combining the most ancient traditions with the most advanced winemaking technologies, a range of labels has been created that spans the various categories of Champagne, classified according to sugar content and divided into vintage and special cuvées (by the way: discover our guide to pairing Champagne with food).
